Catherine Morrow’s Sugar Cookies

This recipe is from a card that Grandma Hickox (Lura) wrote out for me. These sugar cookies were frequent flyers in her cookie jar. They travel well. You have to LIKE this kind of solid, sweet cookie.


Cream together:

  • 1 cup white sugar
  • 1/2 cup butter
  • 1 egg and beat well
Sift together:
  • 2 cups flour
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
Add flour mixture to sugar mixture. Stir in 1/2 cup applesauce flavored with cinnamon and vanilla. (Grandma notes: “I use 1/2 cup crushed pineapple. My grandmother did not have canned pinapples. She used the applesauce instead.”)
Drop by teaspoons onto an ungreased cookie sheet.
Bake at 350 degrees for 10 minutes. Cool and store.
