Fresh Peach Salsa

Oh this is SOooooooooooo good! The last time I took it to a Labor Day picnic it was slurped down in minutes. And all those people who came back for seconds were disappointed.

This recipe was originally published in the Washington Post.

Ingredients:

  • 6 cups peaches, blanched, peeled, pitted and chopped
  • 1 cup chopped red onion
  • 6 jalapeno pepers, seeded and chopped
  • 1 red bell pepper, chopped
  • 1/2 cup loosely packed chopped FRESH cilantro
  • 1 Tablespoon lime juice
  • 2 Tablespoons honey
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cayenne pepper

Combine all ingredients in a large stockpot. Bring to a boil, stirring constantly to prevent sticking. Simmer, stirring frequently for 5 minutes. Let cool. Ladle into containers. Keep refrigerated.

NOTE: I wanted to can this but was told that the acidity is not high enough to make it safe using a water bath processor.
