Holy Spoons

The gift of hospitality sometimes comes with food.

Fresh Peach Salsa

6 cups peaches, blanched, peeled, pitted and chopped
1 cup chopped red onion
6 jalapeño peppers, seeded and chopped
1 red bell pepper, chopped
1/2 cup loosely packed chopped fresh cilantro
1 Tbsp lime juice
2 Tbsp honey
4 cloves garlic, minced
1 tsp ground cumin
1 tsp ground cayenne pepper

Combine all ingredients in a large stockpot. Bring to a boil, stirring constantly to prevent sticking. Cover. Simmer, stirring frequently until all ingredients are soft. Cool. Store in airtight container and keep it refrigerated until serving. Best if made the day before so that the flavors blend.
