Black Bean Burritos

This was my first attempt at a fully vegetarian dish for a friend. It was proclaimed edible by my household, who are decidedly fond of having meat in their burritos!

Black Bean Burritos (adapted from allrecipes.com)

2 cans (15 oz) black beans, rinsed and drained
1 cup cooked and drained edamame
1 large vidalia onion, chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
2 Tbsp minced garlic
1 jalapeno, seeded and minced
2 tbsp minced garlic
1/2 cup fresh cilantro, chopped
4 oz whipped cream cheese or queso fresco (if you can find it)

1. Cook onion, garlic, jalapeno and peppers in a medium sized skillet until tender.
2. Add beans and edamame, stirring to combine and simmer for about 5 minutes. You will need to stir it frequently or it may stick.
3. Add cheese, stirring to melt it into the hot mixture. Remove from heat.

Serve with warmed tortillas and shredded lettuce, fresh tomatoes, shredded sharp cheese and hot sauce as desired.

Makes about 6 large burritos.
