Raised Corn Bread (Bread Machine)

Better for you than tortilla chips. More versatile than corn bread. This is a corn bread made with yeast, making a 2 pound loaf.

Put ingredients in the bread machine pan in order:

  • 1.5 cups water
  • 2 teaspoons salt
  • 2 tablespoons butter
  • 1/3 cup sugar
  • 1/2 cup dry milk powder
  • 1 cup yellow cornmeal
  • 1 cup whole wheat flour
  • 1.5 cups bread flour
  • 2 tablespoons vital wheat gluten
  • 2 teaspoons active dry yeast

NOTES:
You can reduce the sugar to 1/4 cup, but you need to add the real stuff, not stevia or other faux sugars, so that the yeast has something to grow with.
You can substitute 1/3 cup honey for the sugar, but will need to check the dough after the first kneading and see if it needs more flour.
You can add 1/2 cup of thawed, cooked, frozen corn, also adjusting the texture of the dough with more flour as needed.
Other options: add 1/2 tsp cilantro (dried) or 1/8 tsp cayenne pepper

Without the spices, this is a great bread for sandwiches, to serve beside soup, or (on the rare occasion it gets stale) to make into stuffing. I’d upload a picture, but the loaf I made 2 days ago is almost gone. 🙂
