Bean Burrito Filling

Totally a seat-of-the-pants invention and got rave reviews. Enjoy!

INGREDIENTS:
1 vidalia onion, chopped
1 can (15 oz size) blackeyed peas
1 can (15 oz size) black beans
4 oz jalapenos
4 roma tomatoes, diced
1 cup frozen sweet corn
1/2 tsp chipotle seasoning
1/2 tsp fajita seasoning
1/2 tsp chili powder
2 cloves garlic, minced
1 lime, squeezed

DIRECTIONS:
Combine all ingredients and cook in a large saucepan over low heat. Stir frequently. Taste and adjust seasonings.

Serve hot as burrito filling.

VARIATIONS: Add a can of Rotel tomatoes and chilies to make it a more salsa-like consistency. Cook, allow to cool and serve as a salsa.
