A glorious collection of leftovers and this n’ that. Use what you have!
1 – 2 cups diced spiral sliced ham
14 oz can diced tomatoes
15 oz can garbanzo beans
15 oz can cannellini (white) beans
15 oz can red kidney beans
1 large onion, diced
1 cup frozen green beans (I’m sure you can use canned — I just don’t like how they taste!)
1 quart vegetable or chicken stock
Spices to taste: bay leaves, green peppercorns, cumin, garlic powder, mustard)
Put everything in the crockpot. Stir. Start cooking on “High” for one hour. Turn down to “Low” for the rest of the day. Adjust seasonings. Serve with a side salad or cornbread.
