Chili Lime Chicken with Cilantro Lime Rice

chililimechicknIn our continuing experimentation, #2 daughter planned another great menu. This woman can COOK! She’s been saving recipes to try, and so far, everything is a hit! Recently she made this Chili Lime Chicken recipe. It had a bit of heat, a bit of tang, and was very savory. All thumbs up!! on this one!

The recipe is from Heinstirred and originally was meant for wings. Personally, I find wings to be a lot of work for a little meat, a lot of skin, and a bunch of bones. But maybe that’s just me. In any case, this recipe was adapted for chicken breasts and worked out JUST fine. The recipe called for a rub, so the head chef chose this one from Epicurious.

Serve with a side salad and some Cilantro Lime Rice created by #1 daughter

  • 2 Cups of rice
  • 2 cups water
  • 3 Tbsp fresh cilantro, chopped
  • 1 Tbsp fresh lime juice

Put in rice cooker and ignore while you do other things. NOTE: Amounts are approximate and are adjustable to taste.
