Pesto Garlic Burgers

Okay, so this one shouldn’t be filed under “super healthy” meals. But seriously, who could resist? There we were, all out of hamburger buns with the burgers already thawed, and a loaf of frozen garlic bread just begging to be used (yeah, yeah, frozen bread, shame on us; make your own if you so desire). So we figured, why not? And then, ooooh what if we added pesto? So we did (pesto recipe available here, though we made a few changes).

INGREDIENTS:

  • 2 packed cups fresh basil leaves
  • 3 cloves garlic
  • 1/4 cup raw pine nuts
  • 1/2 cup olive oil
  • salt and pepper to taste
  • 1/2 cup ground Parmesan cheese

INSTRUCTIONS:

  1. Combine basil, garlic, and pine nuts in a food processor until mostly chopped (NOT pureed; you want some texture).
  2. Add oil and pulse to mix in.
  3. Add the cheese in, then salt and pepper to taste.

NOTES: As mentioned above, we used this pesto as a burger topping, all on garlic bread. We cut the bread into thirds, and that was just about the right amount, so I guess this serves 3? Though you could serve this to an infinite number of people, provided you had an infinite amount of garlic bread (and really, who wouldn’t want that?).
