Vaughnettes’ Nuggets

I resurrected this recipe from the Vaughnettes’ childhood to send along with a “new baby” meal. I was making Chicken Curry for the parents but knew it was probably too spicy for the Big Brother. The verdict from the testers was, “I’m in love.” “Is this on Holy Spoons?”

It was not…

So behold!!!!

INGREDIENTS:

1 pound chicken breasts, skinless and boneless
2 cups bread crumbs (if you want to use seasoned, skip all the spices… or add more…)
1 tsp garlic powder
1 tsp dried parsley
1/2 tsp cayenne pepper
1/2 tsp dried sage
1 egg, beaten

INSTRUCTIONS:

1. Flatten chicken breasts, cut into approximately 3″ pieces

2. Spray a cookie sheet with cooking spray.

3. Dip chicken in beaten egg, and then roll in bread crumbs. Place on cookie sheet.

5. Bake at 325 degrees F for 20 minutes or until thickest part of chicken pieces tests at 165.

6. Stand back!

NOTE: I usually find I have extra bread crumbs, but I think it’s better to have extra than running out!
